The Snowball

This cookie is truly heavenly.  After a day in the snow, this soft cake-like cookie will definitely warm you up.  Because it's based on a cake mix, it doesn't have the crunch of other cookies but the taste is delicious.  The cake mix also gives it its distinct shape, like a snowball thrown up against the wall.  Enjoy!

Ingredients

  •  1 brick of cream cheese [8 ounces]
  • 1 stick of butter
  • 1egg
  • 1 teaspoon vanilla
  • 1 box of moist white cake mix [18 ounces]
  • powdered sugar

Directions

  •  Oven temp: 350 degrees
  • Bake time per batch: 10-12 minutes
  1.  Let the cream cheese and butter get to room temperature and then blend them with an electric mixer until smooth.
  2. With a wooden spoon, beat in the egg and vanilla.
  3. Mix in the cake mix.
  4. Cover the mix with plastic wrap and put in refridgerator for about an hour until the dough has had time to firm up.
  5. Take out and roll dough into little balls about 3 tablespoons each ball.
  6. Roll each ball in powdered sugar.
  7. Place on a non-stick baking sheet and bake for 10-12 minutes.
